The bark of dried and finely ground Yuzu is as prized as caviar. Discovered by chance with a chef, it took us several months before knowing its origins and producers. Because we find Yuzu in different forms at we of course the thin frozen strips are interesting, the small dices of dried bark have a little taste, but that is nothing compared to the dried and finely ground bark.
The Yuzu, Nippon Lemon imported from China, the yuzu is so well established everywhere in Japan, that it marks the identity of the archipelago with its deep fragrance, vibrant like a memory.
The yuzu is, with the mandarin (mika) a winter fruit, of the Citrus family. Smaller than a grapefruit, it has a rounded shape, with a slightly puffy bark, first leaf green, then orange-yellow. Once opened, it disappoints with its little pulp but above all gives large bitter seeds. Its juice on the other hand is strong in vitamin C and declines flavors of citron or grapefruit-mandarin.
However, for the Japanese, citrus junos, like other nature products, is both a food and a pharmacy: if the juice and zest are used in sauces or cakes, the bark and seeds are used as real natural medicines, treating shoulder pain, preventing the appearance of wrinkles, relieving heartburn, we can especially appreciate the effects in spa, where it is the star fragrance bath salts.
In the kitchen, it goes well with soy sauce to make ponzu. Ponzu can accompany everything: from fondue (nabe-mono) to sashimi, including miso soup. They are found in all sweet and savory dishes. As a result, we sometimes no longer know where to locate it in our olfactory memory. Powerful and exhilarating, the flavor of yuzu has conquered large tables and with globalization, it is meeting an interest increasingly marked with consumers. We bet that in the years to come, the bewitching citrus fruit will succeed in gaining a more important place in our markets.
