Surette is a Quebec word used to describe a "slightly acidic" flavor.

La Surette with apple is made in the heart of the orchards of Saint-Joseph-du-Lac in Quebec from various apples of usual shapes and out of norms. To make this Surette, we thought it would be a good idea to start by maximizing the use of a good old syrup evaporator. He spends most of his time accumulating dust anyway.

We also thought we could revamp a classic North American flavor by creating new astringent interactions and see what happens next.

For this Surette with the apple, for example, our best agreement ended up giving more room to the Malic Mother, an organic and naughty acidity that is naturally present in the apple. The result of all this giving a sweet-sour condiment.
