Contrary to popular belief, capers are not the fruit of the plant, but the buds of the inflorescence that form a beautiful flower when they bloom. Every year, from mid-May to mid-August, the unbloomed buds are picked one by one and sorted on the basis of their size. Then we add sea salt and stir them every day to promote fermentation which gives good maturation and a particularly intense taste to these tasty hard and green buds.
