Raz El Hanout Red with a chilli or softer yellow base, ras el hanout is curry or a mixture of spices in Morocco. It can however vary from one region to another or from one tradition to another because everyone in Morocco has their own idea of the composition. Ras El Hanout indeed means at the head of the shop. Generally composed for the yellow of: coriander, turmeric, caraway, maniguette, cumin, salt, rose buds, ... and for the red of: hot pepper, rice flour, salt, sandalwood, coriander, ... Use: fish, vegetables, merguez and tagines.
