Origin Vietnam. It’s one of our best finds, tasted a few years ago by Stefan Jacobs from Hors Champs, brought back by one of his friends from Taiwan, it’s an incredible berry. An Asian variety of Litsea Cubèb found in Taiwan, southeast China, Indonesia and Vietnam. This variety is the finest, the rarest and the most complicated to return, given that it is produced and harvested by the indigenous tribes of the center of the archipelago. 15 to 50 kilos are available each year. Its lemon verbena scent and its low spiciness make an incredible spice for fish, scallops, but also fruits like passion or apple.
